Welcome to the Waffle House

We made it to Florida! Mom and I departed a few days ago, and after a bit of a rush at PDX, lunch at LAX, and 6 hours up in the air, we made it to the southeastern corner of the US.

Our first full day here we had brunch at the Waffle House which is conveniently just across our hotel's parking lot. We then spent the majority of the day exploring the beautifully revamped Disney Springs! Disney Springs is the WDW version of Downtown Disney, so it's open to the public and is filled with stores, restaurants and live entertainment - a nice, easy going start to our trip after a day of travel. We shopped a bit and then sat down for a FANTASTIC dinner at Chef Art Smith's Homecoming Florida Kitchen!!! An awesome casual table service restaurant that we will definitely be returning to!

We spent the next day at Disney's Animal Kingdom park. One of the things we enjoyed most was going on the Kilimanjaro Safari both during the day and at night. The safari is an attraction where you are taken by truck through the animal reserve on property. Our day concluded with The Jungle Book: Alive with Magic - a choreographed performance of live music and dance along with the popular music and clips from the new live-action version of the movie.

Today, we had brunch at the Waffle House again - we must have looked awfully comfortable there because one of the waitresses confused us for regulars! We're just hangin' out today: watching end of the Olympics, swimming in the hotel's pool, and reorganizing for tomorrow. Overall, our mini vacation has been just perfect as we've adjusted to the time change and humidity. I'm getting eager to move into my apartment, meet my roommates, and find out more about my mini dream job as a WDW DCP Cast Member (Walt Disney World Disney College Program employee)!!! (and Mom is stocking up on tissues for her flight home :) )
